Wild Blueberry No-Churn Ice Cream

unforgettable, made for slow afternoons and long golden evenings.
Ingredients
For the Ice Cream Base
• 1 (16-ounce) whole-milk (4%) cottage cheese (avoid low-fat/nonfat)
• 1 (14-ounce) sweetened condensed milk
• 1ó cups heavy whipping cream
• 1 tbsp pure vanilla extract
• Zest or juice of 1 orange or 1 lemon
• 1 full jar Turtle Rock Farms Wild Blueberry Spreadable Fruit, divided
• Pinch flaky sea salt (optional)
Method
Blend the Blueberry Base: Blend cottage cheese with about 3 tbsp Wild Blueberry Spreadable Fruit until silky smooth; set aside.
Prepare the Cream Base: Whisk condensed milk 2 minutes on medium, then 3 minutes on high. Reduce to low, drizzle in heavy cream, add vanilla and citrus, then whip until light and softly thickened.
Finish: Fold blueberry mixture into whipped cream base; add flaky salt if desired.
Layer & Swirl: Layer half the ice cream into a freezer-safe container, add spoonfuls of blueberry spread, repeat, gently swirl, cover and freeze about 4 hours.
To Serve
Rest 5–10 minutes before scooping. Serve by the scoop, with grilled peaches or nectarines, between cookies, or with fresh blueberries and whipped cream.
Chef's Notes
• Whole-milk cottage cheese creates a luxurious texture while naturally adding protein.
• Orange is softer and floral; lemon is brighter.
• Pure vanilla extract gives the cleanest flavor.
• Use the blueberry spread both in the base and swirled throughout.
• Reaches a beautiful soft-set consistency after about four hours.
Two Beautiful Ways to Serve
Grilled Summer Peaches: Serve with grilled peaches or nectarines, fresh blueberries, whipped cream, toasted coconut, pistachios or almonds, edible flowers and mint.
Ice Cream Sandwiches: Sandwich between sugar cookies, shortbread or lemon cookies. Roll edges in pistachios, almonds, freeze-dried blueberries, sprinkles or drizzle with limoncello.
Summer Sips: Freeze into popsicles or silicone cubes for sparkling rosé, limoncello, sparkling lemonade or sparkling water.
